Light Lunch: GF Pistachio Pesto Wrap

I'm trying my best to get caught up on some things around the house today, but wait... I'm here watching twitter and blogging about my lunch. 


I was in the mood for something quick and high raw so I wrapped up spinach, tomatoes and some pistachio pesto that my bf made earlier in the week.  Yummmm.  The wrap is gluten free, made with teff flour.  It was ok, a little chewy, but not bad in flavor.  The pesto was super flavorful so the teff wrap was really just a vessel for the filling's goodness. 

Ok, back to my chores.  I have a few announcements to make tomorrow about projects I'm starting in October.   Can hardly wait to share!

  2. Yummy pesto! Love pistachios too but never tried it in a pesto I don't think. Another great lunch.

  4. Teff flour? I'm almost certain that I haven't ever heard of that before..where have I been!? :) The wraps look delicious, too.

  5. Teff is the flour used to make injera, the Ethopian sourdough flatbread. I'm pretty new to it too, and I like it.

  6. My bf has started putting pistachios in everything and it's pretty awesome. They're so flavorful and are great for sauces and dips. I'll be posting some recipes soon. I've been getting great tomatoes lately and I'm trying to eat as many as possible before the season ends.

  7. Come to find out, pistachios are amazing in just about anything. We've been on a pistachio kick around here lately. We even made pistachio gravy to serve over quinoa last night. Gettin' crazy in the kitchen! :)

  8. It's store bought, from Whole Foods I think. But I just bought a bag of Teff flour... so maybe I'll make my own soon.
