I Loved Fennel, Sweetie Peppers & Green Food This Week.

Good Sunday morning!  Sleeping in, playing with the cats and having some extra coffee time felt great today after much busy-ness.  Sweet bf even refilled my coffee while I was still in bed.  He's a keeper!  Work has been taking a little more of my energy because I'm learning a bunch of new stuff (thankfully there's always more to learn in my field!) and I'm studying for certification in my specialty.  I also turned our spare bedroom into an office.  And I was on call for 75 hours on top of my usual work schedule.  Hmmm, this explains sleeping 11 hours last night? 

I'm still on my green food kick.  Work food has been kale salad, carrots & tahini, and fruit:


I actually pack 2 kale salads because I'm at work for 12 hours.  I've been trying to have a green smoothie or juice before I leave the house in the morning.  The difference in my mood and energy level is noticeably better when I have my green drink.  Here are a few juices I made this week:



The addition of fennel was especially good!  For dinner one night I made a cheesey green pasta with some veggie noodles that we get at a Japanese market:


The noodles remind me of udon, but have extra veggies added in.  Of course I Americanized them by putting them in a creamy cheesey sauce with some sweetie peppers and sauteed onion.  The cheese sauce used We Can't Say It's Cheese Cheddar Spread, Daiya Mozzarella Shreds, tahini, lemon juice, salt & pepper, and almond milk.  It was quite a delicious comfort food treat.

And of course we had our favorite non-green food on pizza night:


Rosemary crust brushed with olive oil, red sauce, fresh basil leaves, sauteed fennel & mushrooms, Daiya shreds, and sweetie peppers from the olive bar.  I really love making pizza.

  1. Glad you got the extra rest you needed. As important as green food I think.

    I love fennel in my green juices too. I used to walk around Seattle wanting to rip up the fennel I saw growing on the street like weeds. Enjoy it.

  2. All your juices sound so fantastic but I love the addition of fennel!! I've got to try that. Actually, everything sounds really great. I saw another pizza post lately and I am dying for one soon. Sweetie peppers, yum.

  3. OMG that pizza! Yum! It looks beautiful and perfect. Your green drinks all look lovely and I love the combos you put together! Your work food looks like the perfect fuel for a 12 hour day and that cheese sauce and green pasta also looks hearty, yet light at the same time. Lovely food! Glad you were able to rest and lounge this morning :) You deserve the break!

  6. Yes, adequate rest is just as important as food. As least for me. I'm going to hit the hay early tonight in preparation for my work week. I'm usually pretty good about sleeping in advance, but some weeks I still need more.

    The first time I had fennel in green juice was at Chaco Canyon. I think it was called the green dragon or something like that. It's so good!

  7. What kind of juicer are you using? I have an old braun, but I find that I need to use a lot of produce to get a cups worth of juice? Does this happen to you?

  8. Hi Kirsten! I have a Jack LaLanne Power Juicer and it does ok. Not the best, but for the price it does the job. My pulp is actually pretty dry, but some small chunks go through unprocessed.

  9. Looks like I need to try fennel too! I love when I get new favorites. I'm on a cauliflower kick lately (not in juice but in general). All looks delicious!

  10. Thanks! It's exciting to find a new food love, and fennel is at the top of my list right now. Cauliflower has caught my attention lately, too. I saw a recipe for roasted cauliflower with smoked paprika that I've been wanting to try.

    what if you composed a catchier post title? I ain't suggesting your content is not solid., however what if you added a headline that grabbed people's attention?
    I mean "I Loved Fennel, Sweetie Peppers & Green Food This Week." is kinda boring.
    You should look at Yahoo's home page and watch how they create post titles to grab people interested. You might add a video or a picture or two to get readers excited about what you've got to say.
    Just my opinion, it might make your website a little bit more interesting.
