The Great Smoothie Comeback and Easy Food Times

Coming down from the holidays has led to simple meals, fruits & veggies, and smoothies.  Part of this stems from wanting to just take it easy (aka lazy-times), another from a craving for lighter eats after all the rich holiday feasting.  On work days I need to take along pretty much all of my food for the day.  I've been drinking a big smoothie in the morning then packing lunch, dinner & snacks.  Sometimes this means relying on pre-made food.  This a pretty good example of a day's worth of easy food:

Smoothies have made a big comeback at my house!  In the past I've had trouble drinking ice cold smoothies in the middle of winter.  Adding more hearty ingredients like peanut butter and nuts seems to make it easier.  Actually, I crave them now.  Starting my day with hydrating and nutrient dense blended fruit and greens makes a big difference in my energy level.

So far January has been busy (lots of work!).  I'm rotating between long work shifts and mega naps.  Green juice has also made a comeback.  I can't get enough of it lately.  My body likes the good stuff.

Hope your January is going well so far, and hope you're all ready for Friday the 13th!

  1. Green smoothies are totally making a comeback in January! I'm still trying to get used to it. I'd rather just eat a big fat salad than drink my greens but your smoothies sound great! They look super creamy as well, yum!

  3. mmmm smoothies are big in our home too. I don't really do the green ones as often as I should, but I do included a handful of spinach in them, mostly they are pink or purple:P

  4. Good for you! Peanut butter is like crack to me, I'd eat anything it's added to (ok within the vegan GF guidelines). Good way to trick yourself back into smoothies again. I always felt like the intital chill of the winter really makes it hard to have smoothies but then your body gets more used to it and it gets easier.

  5. I've been packing more and more to bring to work too, even though I'm only there for 9 hours, haha. I love the whole array you have. I'm still big on smoothies, mostly because our apartment is so warm. The blueberry one you have there looks great!

  7. Oooh, I love the pink ones too! Sometimes I wish I didn't automatically stuff greens into the blender every time I open it :)

  8. Yeah, the pb goes in and on so much since the weather turned cold. Fruit, smoothies, sandwiches, salad dressings... it goes with anything. I'm definitely getting used to the smoothies. It feels good to want and enjoy greens again.

  9. I leave the house at 8am and get home around 10pm. It's a long day and I'm always afraid if I don't have enough food I'll be stuck with the hospital cafeteria salad bar. Yuck.

  11. Yay for Friday the 13th! My band's going into the studio today, so hopefully it's not a bad omen or something...it would be a shame if we all got axe murdered or what have you. Knock on wood. Smoothies are amazing, and I somewhat abashedly admit to eating them at room temperature in the winter...

  17. I have a really hard time drinking smoothies in the winter, too - but if I don't add any frozen ingredients, I fare pretty well :) The peanut butter banana blueberry smoothie sounds delicious!
